At the top of the Durango volcanic plateau grows the agave cenizo , a wild species that withstands frost, drought, and the passage of time. It takes between 10 and 14 years to mature. Only then does it reveal its true spirit.
From each piña—weighing 15 to 18 kg—a liter of pure mezcal is produced, with smoky and mineral notes that speak of the land where it grew.
